Easy Muffin Pan Omelets

This is one of my favorite breakfast recipes. Start with this basic recipe and then feel free to modify with what you have in your kitchen or to your tastes. (It's great for leftovers!)

Ingredients

  • 12 eggs or equivalent egg whites
  • 2 cups spinach rough chopped
  • .5 cup almond milk
  • .5 cup ham or meat of your choice
  • .25 cup goat cheese or cheese of your choice
  • .25 tsp salt or to taste
  • .125 tsp pepper or to taste

Instructions

  1. Preheat oven to 350

  2. Whisk together eggs in a large bowl

  3. Add remaining ingredients and stir until moistened

  4. Ladle mixture into unlined muffin pan

  5. Bake for 12 to 15 minutes, or until eggs are set

  6. Allow to cool for 5 minutes

Recipe Notes

I like to use a silicone muffin pan because the omelets slide out easily. By the way, silicone muffin pans are a great way to freeze individual serving of Creamy Overnight Oats. Freeze remaining omelets and microwave individual servings for a quick and easy breakfast.
